 It’s still quite cold outside, so you may like to curl up by a fire with a good book and some unbeatable hot chocolate, or perhaps you’re in need of a delicious, warm bowl of soup instead. Either way, Great Harvest is here to help you create something wonderful. During the winter months, we can’t forget the delicious seasonal vegetables we have at our disposal. Here’s what you’ll need: 
3 tablespoons of olive oil
1 cup of onion, coarsely chopped
1 cup of Granny Smith apples (cored, peeled, and chopped)
1 cup of turnip (peeled and chopped)
1 cup of butternut squash (peeled, seeded, and chopped)
1 cup of carrots (chopped)
1 cup of sweet potato (peeled and chopped)
5 cups of vegetable or chicken stock
¼ cup of maple syrupCayenne Pepper to taste
1 small baguette (preferably whole grain)
3 ounces of goat cheese for serving
¼ cup of fresh chives (chopped)

To make the soup, follow these simple instructions: 

  • Serve the soup in warmed bowls alongside your bread and cheese
  • Heat the olive oil in a large saucepan on medium heat, then add the onions and saute until tender.
  • Add the apple, turnip, carrot, sweet potato and squash, season with salt, and saute for around 5 minutes.
  • Add the vegetable or chicken stock and boil, stirring occasionally, then cook for around 30 minutes.
  • Add maple syrup and cayenne pepper to taste.
  • Allow the soup to cool slightly, then puree with a hand mixer or blender.
  • Cut 6 slices of bread, spread them with goat’s cheese, and sprinkle with chives.
