 We here at Great Harvest in Tulsa are getting pretty excited about the prospect of spring’s arrival. We’re already planning what we’ll be eating when spring arrives, and we’d love to share a couple of recipes for spring pestos with you so that you can enjoy the bounties of the season along with us.


Spring Greens Pesto

Ingredients:

1/2 cup broken up dried mushrooms
3 tablespoons olive oil
3 cloves garlic, minced
1/2 lb or so greens in season
1/2 cup grated Parmesan cheese
1/4 cup lightly toasted nuts (pine nuts, almonds or walnuts)
1/2 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1/2 lemon
Reconstitute the mushrooms by placing them in a bowl and pouring over just enough boiling water to cover them. In a large pan, saute the vegetables in the oil until they are tender (add tougher vegetables first then add the others). Cook them until they are wilted. Scrape the vegetables into your blender along with the mushrooms and other ingredients and puree until silky smooth (unless you like your pesto a little chunkier, that is).

Spinach and arugula pesto

Ingredients:

2 cups arugula
2 cups spinach
1 garlic clove (finely minced)
¼ cup toasted walnuts (you can toast them by tossing them in a hot un-oiled pan)
½ cup grated parmesan
¼ cup good-quality extra virgin olive oil

Place all the ingredients apart from the oil in your blender or food processor and pulse a few times to start them mixing. Then, turn your processor on low and pour the olive oil in gradually as it mixes. Blend until it’s the desired consistency.

You can keep both of these pestos in an airtight container for up to five days in your refrigerator or a month in the freezer.
