Delicious Ghallaba Recipe

Ghallaba is a Lebanese dish that is sadly not easy to find even in Mediterranean restaurants. Amaze that someone special when you break out this recipe for two.

Ingredients to Make Ghallaba

  • 1/2 zucchini
  • 1 carrot
  • 2 potatoes
  • 1 medium sized onion
  • 1/2 can of diced tomato
  • 1/2 red bell pepper
  • few florets of cauliflower (optional)
  • 2 cloves garlic
  • 1 green chili
  • juice of 1 lemon
  • olive oil for stir frying and for making the garlic sauce
  • 1/2 cup basmati rice (uncooked)
  • 1/4 cup vermicelli noodles (uncooked)
  • handful of slivered almonds
  • hummus of your favorite variety and brand
Spices
  • 1 tsp of dried mint
  • 2 tsp of oregano
  • 2 tsp of cumin powder
  • 4 tsp of Sumaq
  • 2 tsp of dried parsley
  • salt to taste

Rice Preparation

Slice all vegetables to the same size so that they cook in the same amount of time. Dry cook the vermicelli in a frying pan until it turns brown. Put 1/2 cup of rice and 1 cup of water into a rice cooker or deep pot with a bit of salt and olive oil and begin to cook. When it is half-way done, add the vermicelli and continue cooking. Upon completion, fluff with a fork and add the almonds.

Garlic Sauce Preparation

Crush the garlic with 1 tbsp of olive oil, half of the lemon juice, green chili, and some salt with a mortar and pestle. Continue to mix until it becomes a pasty sauce. Put all the spices together in a separate bowl and set it aside.

Stew Preparation

Sautee the onions in a large pan until golden brown. Place them on a plate and set them aside. With the same pan, heat the garlic sauce until the garlic turns brown. Add some more olive oil with the vegetables. Stir fry for about four minutes then add the spices and the remainder of the lemon juice. Stir fry for another minute before adding the tomatoes. Mix until the tomatoes have covered all the ingredients. Cover and cook until the veggies are tender. Replace the sauteed onions and salt to taste.

Serving Directions

Place the hummus in the middle of a circular plate, then spread the rice around the hummus. Pour the stew around the rice and serve.
