If you find yourself, like many of us, very busy in the morning, trying to get yourself and others ready for the day, being sure you’ve got all of your appointments in order, a fresh cup of coffee, and yet wanting to ensure that you and your family are eating well in the morning, then Great Harvest in Tulsa has a great idea for you today. If you’ve yet to hear about this great idea, then get ready to have learn how to prepare an excellent breakfast up to a week before you’ll need it, and just pop it in the microwave or toaster oven when it’s time to eat it. Egg Muffin cups are a great way to do just that. 

It’s important to remember that there are several variations to this recipe. You can add whatever meat, cheese, or vegetables you like the best, and you can even do a few of the muffin cups with some ingredients and the other muffin cups with out. It’s really up to you. These are just the general ingredients and instructions that will follow. 

Your Ingredients: 

  • 12 slices of bacon, turkey bacon is another great option
  • 1 cup of cheese, cheddar is great but choose whichever you desire
  • 1 cup of meat, like sausage or ham, if you want more filling
  • 1 cup of vegetables should you desire
*Remember that adding extra is up to you, simple bacon, egg, and cheese muffin cups are absolutely delicious as well!

Your Simple Instructions:

  • Preheat the oven to 375
  • Spray the muffin tin with Pam or Olive Oil spray
  • Wrap bacon around the inside of each muffin tin
  • Using a small bowl, whip eggs together
  • Add the cheese and any other ingredients you think sound tasty
  • Don’t forget to use some seasoning!
  • Pour the egg mixture into each muffin tin, trying to keep the mix inside of the bacon wraps
  • Bake for approximately 25 minutes, or until eggs look ready
  • Remove from oven and serve then or put them in the refrigerator for later eating
*These will also freeze well if you desire to make a large batch at once for later

Not only is this a delicious breakfast option, it’s also filling, balanced, and healthy.
