Irish Mashed Potatoes Recipe

Colcannon is usually associated with St. Patrick’s Day, for obvious reasons, but this recipe an help keep you warm all fall and winter long. Be sure to come home with an empty bowl from your St. Patrick’s Day party.


·  2-1/2 pounds of peeled and cubed potatoes
·  4 slices of bacon
·  1/2 of a small head of chopped cabbage
·  1 large chopped onion
·  1/2 cup of milk
·  1/4 cup of melted butter
·  salt and pepper to taste


Put the potatoes in a saucepan and cover them with water. Bring to a boil and cook for an additional 15 to 20 minutes, until the potatoes are tender. Cook the bacon in a medium-sized skillet until the bacon is evenly browned. Drain the bacon and keep the drippings. Crumble the bacon and set it aside. Saute the cabbage and onion in the reserved drippings until the cabbage is soft and the onion is translucent. Covering the skillet with a lid will help the vegetables cook faster. Drain the cooked potatoes and mash them together with the milk, salt, and pepper. Add the cabbage, onion, and bacon, folding the ingredients into the mashed potatoes. Put the mixture into a large serving bowl and create a well in the middle for the melted butter. Serve immediately.
