How to Make Gazpacho

Now that summer has arrived, store your hot soups for winter. In Andalusia, Southern Spain, summer temperatures frequently top 100 degrees. Gazpacho is a soup served cold to help keep cool in these sweltering summer months. Give this ancient recipe a shot and share it with friends for a taste of Spanish culture and history.


  • 2 lbs of juicy tomatoes
  • 1 garlic clove
  • 1/2 white onion (not sweet)
  • 1 green bell pepper
  • 1 peeled cucumber
  • 1/4 tsp ground cumin
  • 3 tbsp red wine vinegar
  • 1/2 tsp salt
  • 1 cup of virgin olive oil
  • 1/2 loaf of French bread (stale is ok)


Soak the bread in a bowl of water. Once saturated, discard the water, wring the bread as dry as you can, and set it aside. Blend the tomatoes, garlic, onion, bell pepper, cucumber, and bread in a food processor. Then mix in all the ingredients and blend at the highest power possible until thoroughly creamy with no chunks. Pour into a jar or bowl and chill in the fridge. The colder the better! Serve as the first course of a meal, or enjoy it with some jamon serrano, anchovie-stuffed olives, and manchego cheese for an authentic Andalusian experience.
